Cobb Salad Wrap Sandwich


One of my favourite salads is the Cobb Salad.  You know  . . .  with bacon, eggs, lettuce, tomatoes, spinach or lettuce, onions, blue cheese and avocado.  Today I decided to try it as a lunch/picnic sandwich wrap.  Saaaay what???  Yes, a wrap.  Mostly because I was inspired by this month's Degusta Box which included a recipe for a tasty looking wrap in it.  Okay, theirs was just a simple wrap and I expanded on that a bit, but hey . . .  you know me. I just can't leave well enough alone, and it was screaming COBB Salad to me!



I love these boxes. Opening each one is tiny a bit like opening a Christmas gift. Always a surprise, and always filled with things that pique my interest and desire to try. Degustabox is a monthly foodie subscription service that sends out a range of 10 to 15 specially selected foodie products. There's always a great mix of new products that I haven't tried before, as well as plenty of treats from more established brands. Here is what was in the July Box, which had a kind of a Picnic/Summer theme, which was actually perfect since we have had a beautiful summer this year!!



This was the product of the month and I received two mixes.

Brazilian Smoked Paprika & Spices Seasoning Mix 1 X £1.00

Mexican Guacamole Mix 1 X £0.65

MISO TASTY Mugi Barley Miso Soup 1 X £3.75

Made from fermented barley and soybeans, this soup has a light but hearty flavour. The mushrooms add a sweet, earthy taste and are packed separatedly to keep the miso fresh and the mushrooms flavoursome!

PULSIN Salted Caramel Raw Choc Brownie 1 X £1.59

A deliciously decadent healthy brownie. Who knew that could even exist?  Well, now it does! Crafted with the finest natural ingredients, the new Salted Caramel Raw Choc Brownie is the perfect treat for an indulgent yet guilt-free snack! 

All of these raw snacks taste the same to me.  Not unpalatable by any means, but no where near the enjoyment of a real brownie.

LONDON FLAVOURS Premium Potato Crisps 2 X £0.95

These premium crisps are made with the best British Potatoes, roughly peeled, seasoned with delicious flavours and hand cooked in small batches to ensure an even crispier quality. Now you can share a flavour of London life. I received one packed of lightly salted and one packet of cheddar and onion.  You know me. Of course I loved. I adore potato chips full stop.  Not greasy like some hand cooked potato chips can be, and delightfully crisp. Not too salty and well flavoured.



ROSIES PIG Flat Tyre 1 X £2.00

Lightly sparkling, cloudy cider with rhubarb juice. Made with fresh pressed Herefordshire apples, this sweet and well balanced cider is slowly matured and left unfiltered to create an uncompromising flavour. The fruity taste paired with a tart finish makes it refreshingly moreish.

Enjoyed by an alcohol drinking neighbour.


CADBURY Highlights Milk Chocolate 1 X £2.99

This is the hot chocolate drink we have always bought. Most times I buy the singles, which come in a variety of flavours. Then we can enjoy according to mood.

Ribena Sparkling is a grown up twist on a classic, this time wit bubbles included.  Available in two tongue tickling flavours; Blackcurrant and Pineapple & Passion fruit.  This refreshing new drink comes in at less than 15 calories per bottle. Available now at pubs near you. 

YUM!  I loved these!


HEINZ SALAD CREAM 1 X £1.49

After a century o being a must-have ingredient in lunch boxes and picnic hampers up and down the country, Heinz Salad Cream still has its deliciously zingy taste that makes it one of Britain's best-loved sauces!

I love Salad Cream and I use it quite a lot.  It is a vital ingredient in my coleslaw dressing and indeed in many of my salads and for devilled eggs.  The box came with a recipe from the Heinz Company for a sandwich wrap and I thought, why not go with it and so I did!


I had never thought of mashing avocado together with salad cream before.  This was new to me, and I wasn't entirely sure if I would like it, but I like salad cream on salads with avocado, so why not mash them together! 



I did change their recipe somewhat.  Not in any huge way, but by using whole wheat tortilla wraps instead of white ones . . .  to get in more fibre and to be more Diabetic friendly.


I also added sliced boiled egg, crumbled bacon and crumbled blue cheese to give it more of a Cobb Salad feel, which we both really enjoyed! 


This was absolutely flipping delicious, albeit a bit messy to eat. If I do it again, and I am pretty sure I will, I will cut the eggs and tomatoes into smaller bits so they don't fall out!  I might even add some chopped cooked chicken  or turkey. Now that really would be a Cobb Salad Wrap!

Cobb Salad Sandwich Wrap

One of your favourite salads in a wrap. Make ahead, wrap tightly and refrigerate over night for the perfect lunch on the go!

ingredients:

2 small ripe avocados, peeled and mashed
4 TBS Heinz Salad Cream
4 (8-inch) soft whole wheat flour tortilla wraps
four handfuls of fresh baby spinach leaves,
washed,trimmed and stems discarded
1/4 pound cherry tomatoes, quartered (240g)
4 slices of  streaky bacon, cooked until crisp and crumbled
1 small red onion, peeled and very thinly sliced
4 small hard boiled eggs, peeled and thinly sliced
4 TBS crumbled blue cheese

instructions:


Mash together the avocado and salad cream with a fork.  Spread one fourth of this mixture onto one side of each of the four tortilla wraps.  Divide the sliced red onion between each wrap.  Top with one fourth of the baby spinach leaves, dividing it equally.  Lay the sliced egg on top of the spinach, and sprinkle with the tomato quarters, bacon crumbles and crumbled blue cheese.

Carefully roll up tightly and either eat right away.  For portable lunches,  place each onto a sheet of baking parchment and roll up carefully, making sure that the parchment stays on the outside of the wrap. Twist each end like a fire cracker, and place in the refrigerator to chill until needed.  Cut in half (diagonally) through the paper and place in the lunch box.

Cob Salad Sandwich Wrap
